I’ve always found tofu extremely boring and because of that, and because I am trying to take a break from meat now and then, I tried doing it the asian way: fried and with the help of some soy sauce. This tofu, veggie wok turned out to be pretty delicious!
For 2 portions you’ll need:
*3 chopped garlic cloves
*1/2 head of broccoli
*2 spring onions or 1/2 onion
*4 tbsp soy sauce
*3tbsp coconut oil
In a wok or frying pan heat the coconut oil and add the garlic and carrots. Cook until the garlic turns golden and add the tofu, the soy sauce, and curry. Fry for 2 more minutes then add the broccoli and cook for another 4 minutes. Enjoy!
