Tofu and Egg Romaine Tacos

I like to call this recipe the fancy, healthy version of breakfast egg tacos. Fancy because it’s pretty, healthy because it has loads of fiber, vitamins, protein and good fat!

For 1 serving:
*100g chopped tofu
*3 romaine lettuce leaves
*1 scrambled egg
*1 avocado
*1tbsp soy sauce
*1tbsp coconut/olive oil
*some parsley
*a bit of balsamico or tabasco

In a frying pan, heat the coconut oil and fry the tofu with the soy sauce for about 3 minutes. Empty the frying pan and scramble the egg. Chop the avocado and parsley and put everything together. Sprinkle some balsamico or tabasco.
