Salmon with Garlic and Lime

When I started making this dish I was completely out of ideas and my fridge was full of leftovers. It actually turned out pretty delish and this is why I decided to share it with you!

For 2 portions you’ll need:
*2 pcs of salmon
*3 chopped garlic cloves
*1lime or lemon
*1cup quinoa
*2 spring onions or 1/2 onion
*200g green beans
*4 tbsp soy sauce
*2tbsp coconut oil
*4tbsp olive oil

 

Boil the quinoa, and in the meantime saute the green beans in the coconut oil with 1/2 an onion and the 4 tbsps of soy sauce (add some curry for extra spice). If you are using fresh green beans, add 1/4 cup of water and let them boil. Cut the lime/lemon in half and slice half of it. In another pan heat up the olive oil and saute the chopped garlic and lime until the garlic turns slightly brown. Then add the fish and cook it about 2-3 minutes on each side. Right at the end squeeze the other half of the lime on top of the fish. Enjoy!
