I am sharing this breakfast idea because I’m in love with the texture of scrambled eggs/omelet made with mashed avocado.
For 1 portion:
*1 garlic clove
*1 chili (optional)
*1tsp olive oil
Chop the garlic and chili, and in a frying pan over medium heat, saute it for a minute in the olive oil. In a bowl mash the avocado, add the eggs, curry, mix it all together and cook it with the garlic and chili. Add some greens, like rocket or spinach, to get some extra fiber and vitamins. Plus you’ll feel fuller!
